Coconut brain balls recipe with Waimarino Organic Virgin Coconut Oil

Coconut Brain Balls

These are an instant energy and a high protein blast that can be made in 20-30 minutes.

Ingredients:

  • ½ Cup Creamed Coconut
  • ½ Cup Waimarino Organic Virgin Coconut Oil
  • 1/2 Cup Cacao Powder/ Cocoa Powder
  • ½ cup of desiccated/shredded Coconut
  • 2 Cups Walnuts cut up fine or ground up
  • 1 Cup Sunflour Seeds ground up
  • 1 &1/2 Cups Coconut Sugar

Put ½ Cup of Creamed Coconut and ½ Cup Waimarino Organic Virgin Coconut Oil into a pot to melt. (don’t over heat, just heat until melted and remove from heat)

Put in the food processor to mix, Cacao, decimated coconut, Coconut Sugar, ground up walnuts and sunflour seeds.  Give that a whizz together.

Then pour in melted coconut cream and coconut oil. Stir together. Add or use up to a ¼ cup of water (you may not need this in summer).

If you require to make the mixture more sticky, pour in water slowly, until mixture is holding together and sticky.

Remove from the food processor, tablespoon at a time and drop onto a plate of decimated coconut. Cover Brain Ball Mixture with decimated coconut and roll around until covered with coconut and it is shaped in a ball.

Put coconut covered Brain Balls onto a tray with grease proof paper on it. Once all mixture has been rolled into Balls and covered in Coconut and placed on the grease proof paper, put the tray in the fridge to firm up Coconut Cream, Coconut Oil and mixture.

The Brain Balls can be eaten within half an hour once mixture has hardened. The Brain Balls must be kept refrigerated as they will soften if left out of the fridge.
